The olive-grove is about 5 hectares, on the hills, where ground and conditions are perfect.
The olives (Frantoio and Leccino) are harvested by hand from the threes in the beginning of the maturation and after been choiced with care are brought immediately to the olive-mill.
Here they are cold milled with millstones, in the way that the olives can let out all the flavour and the slightly piquant taste, typical of the Tuscany olive-oil
